Ummm, don’t you know that they have a Queen ruling right now?
But anyways, it would be most polite to say :
Beautiful Queen of England,
or for George say:
Good King of Great Britain,

I assume this is part of a history assignment… and I believe a proper salutation would be "Your most dignified Majesty" and a proper closing might be "I have honor to remain, Sir, Your Majesty’s most humble and obedient subject".

Well i would say.
Hello George. Everyone thinks you’re dead because we haven’t seen you down the pub lately.
By the way George don’t bother about that colony in the Americas, it will only end up about seven hundred billion dollars in debt anyway.

I would start by addressing him as "the most serene and most potent Prince George the Third, by the grace of God, king of Great Britain, France, and Ireland, defender of the faith, duke of Brunswick and Lunebourg, arch- treasurer and prince elector of the Holy Roman Empire etc".
This is how His Late Majesty is addressed in the Treaty of Paris (1783) when he was gracious enough to make peace with the rebellious colonies in the North American land mass.

According to an old Office Manual I have the formal opening of a letter addressed to a king is "Sir".
The envelope is address "His Majesty the King".

It is not customary to address letters directly to a king; communications are generally addressed to:
THE PRIVATE SECRETARY TO THE KING
asking that the subject of the letter may be placed before His Majesty, His Majesty the King, or His Majesty George III, King of England
Sir:
(close letter with:
I have trhe honour to remain,
Your Majesty’s obedient servant,

MACCA I Love your answer it is priceless.
Please do not be rude to people by calling them brainless. The fact is you left yourself wide open for the funny remarks by not wording your question correctly. They all knew what you meant. they are just having fun with you. It is called the British Sense of Humor.
